Chocolate chili & chocolate cornbread?
Feb. 13th, 2007 10:31 amI've been wanting to make chili for weeks now, but haven't gotten around to it. Recent & upcoming events led me to search around for recipes involving chili and chocolate. I may want to try these out soon!
Bry's Chocolate Lamb Chili
INGREDIENTS
1 medium onion, chopped
1 pound lean ground lamb
2 tablespoons olive oil
1/2 teaspoon red pepper flakes
1/2 tablespoon dried basil
1 teaspoon cumin
1/8 teaspoon cinnamon
2 large cloves garlic, minced
3 1/2 tablespoons chili powder
1/2 teaspoon dried oregano
1 teaspoon unsweetened cocoa powder
1 teaspoon white sugar
1 bay leaf
salt and pepper to taste
1 (14.5 ounce) can diced tomatoes with juice
4 cups red beans, with liquid
DIRECTIONS
In a large pot, cook onions and ground lamb in olive oil over medium heat.
When onions are soft and meat browned, season with red pepper flakes, basil, cumin, cinnamon, garlic, chili powder, dried oregano, cocoa powder, sugar, and bay leaf, and salt and pepper to taste. Cook for 1 or 2 minutes. Stir in tomatoes and beans. Increase heat to bring soup to a boil. Reduce heat, and simmer for 15 minutes.
[vegetarian] Black Bean and Chocolate Chili
2 tablespoons olive oil
1 1/2 cups chopped onions
4 garlic cloves, minced
1 stalk celery, sliced
1-2 jalapeno chiles, minced
1 tablespoon cumin
2 teaspoons oregano
1/2 teaspoon cinnamon
1 pinch ground cloves
1 teaspoon ground coriander
1 tablespoon chili powder
1/2 teaspoon ground black pepper, to taste
1/2 teaspoon salt, to taste
1 1/2 cups chopped bell peppers (red and green are nice)
2 (14 1/2 ounce) cans black beans, rinsed and drained
1 (14 1/2 ounce) can diced tomatoes
1 tablespoon fresh lime juice (optional)
1 tablespoon soy sauce
1 1/2 ounces semisweet chocolate (about 1/4 cup)
cheddar cheese or sour cream or scallions, for serving
In a large skillet, heat olive oil over medium heat.
Add onions and garlic and sauté until onions become soft and translucent, about 10 minutes.
Add the celery and chile, cover and cook for another five minutes more.
Reduce the heat and stir in spices, (cumin, oregano, cinnamon, cloves, coriander, chili powder, black pepper, salt) along with the bell peppers.
Cover again and cook for another five minutes.
Stir often to keep the spices from burning.
If pan get too dry add a little liquid from the diced tomatoes, or some water.
Next, add the black beans, tomatoes, lime juice (if using) and soy sauce.
Let the chili simmer on low for 5 to 10 minutes, until it thickens slightly and flavors combine.
Stir in the chocolate.
When chocolate has melted, taste to adjust the salt and pepper.
Serve with topping of your choice.
I like cheddar cheese, sour cream and scallions
I like cornbread with my chili, so how about:
chocolate cornbread(Cornbread with chocolate swirls)
Preparation Time: 10 minutes
Ingredients:
Cornbread mix
chocolate syrup
Directions: As you are mixing batter foe cornbread add chocolat syrup in mix.Makes a swirl in the batter and makes an attractive serving.Good too.
Or just make the "cornbread" portion of this recipe?
& of course serve it all with some really good sharp cheddar and some dark Ale! yumyumyum.

Chili is in the crock pot. I added some melted Degoba Xolatl (melted with butter) and used half black beans and half red kidneys. Other than that I left the recipe the same.
I used the same butter and Xolatl mixture to swirl through a box of regular Jiffy Cornbread mix. The cornbread didn't 'swirl' as prettily as I'd hoped, but it should be yummy.

I was thinking I wanted a less-sweet cornbread this time out. Maybe. Hm.
